Bleu d’Auvergne is a blue French cheese made from cow’s milk, whose name is associated with the Central French Massif, located in the center of Auvergne, one of the most cheese regions of France. The taste of this cheese is slightly spicy, with distinct tones of herbs and wild flowers. The cheese has thin streaks of blue mold evenly distributed throughout the cheese body, it is fragrant, buttery but not as sharp as the legendary Roquefort.
